
How to Prevent Your Oak Cutting Board from Cracking and Splitting

Wooden cutting boards have always been my go-to in the kitchen—they're sturdy and timeless. They also have a natural charm that no other material can match (which is why Jake and I created our own scalloped oak cutting board!). However, like any cherished investment, a wooden cutting board requires a bit of TLC to ensure it stays in top condition.
One of the most common issues I’ve encountered—and seen others struggle with—is cracking. Fortunately, with the right care and maintenance, your wooden cutting board can stay beautiful and functional for years to come. Here's how to protect it from cracking and keep it looking its best! I’ll be using an oak cutting board for reference, since that’s what I use in my kitchen, although these tips apply to all wooden cutting boards.
1. Season Your Board
Before using your oak cutting board for the first time, season it with food-grade mineral oil. This helps seal the wood, preventing it from absorbing moisture and reducing the risk of cracks. Go particularly heavy on the oil the first few times around, as your cutting board will be particularly absorbent. Regularly oil your board—at least once a month—to maintain its integrity.
2. Avoid Excessive Moisture
Water is one of the main culprits behind wooden boards cracking. Never soak your oak cutting board or put it in the dishwasher. Instead, wash it by hand with mild soap and warm water. Dry it immediately with a clean towel. If you decide to let it continue air drying afterwards, be sure to leave it standing upright! This will help avoid the two sides of your board from drying at different rates, which causes warping.
3. Store Properly
Store your cutting board in a cool, dry place with adequate air circulation. Avoid leaving it in direct sunlight or near heat sources, as extreme conditions can cause warping and splitting.
4. Use Lemon Juice and Salt to Get Rid of Smells
Over time, and depending on the type of food you are preparing on your board, it’s possible that you might notice your board retaining a slight smell. If this is the case, don’t panic– there are several homemade solutions you can use to clean your board to get rid of the smell! One solution is rubbing your board down with a fresh lemon, followed by salt; use the scrub to rub your board down thoroughly.
